Off the skins at a temperature of 12°C, without malolactic fermentation.

Ageing

In steel and then in the bottle with yeasts fining for 18 months.

Tasting notes

Extra brut, soft, with four grams of sugar during disgorgement. Soft-scented, supple body with a pleasant velvety, approachable and suave sensation.

Serving suggestion

Ideal as an aperitif and also with all courses of a fish menu.
